Now this is my twist on a Greek chicken gyro recipe. It’s my own personal twist. Let me just show you real quick what we have going on in this Greek chicken ‘gyro’.

Ingredients

For the chicken

  • 1.5 lb Chicken Tenders
  • Olive Oil for the Pan Extra Virgin

For the Chicken Gyro Marinade

  • 1 Cup Greek yogurt (you can use reduced fat or fat free Greek yogurt if you like)
  • 1 Large Lemon Lemon Juice
  • 2 tbsp Greek olive oil Extra Virgin
  • 2 tbsp Red Wine Vinegar
  • 3 Garlic cloves, minced
  • Kosher salt, generous pinch to taste
  • Black pepper, generous pinch to taste
  • 1 tbsp Oregano
  • 1 tsp Sweet Paprika 
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • Pinch Cayenne Pepper, optional

Other Gyro Fixings

  • Pita Bread
  • Homemade Tztaziki Sauce
  • 1 large Tomato (sliced)
  • 1 Cucumber (sliced)
  • 1 Green Pepper, Cored and sliced
  • 1 small Red Onion, sliced into half moons
  • Pitted Kalamata Olives

Notes

  • These are the fixings that are going to go on top once you have your chicken, and for the chicken I go the quick and easy route and use chicken tenders right here. 
  • Otherwise you can use boneless chicken thighs or boneless chicken breasts that you can cut up into small pieces, but why do the work? Chicken tenders are ready.
  • In the bowl, going to go ahead and put together yogurt marinade for the chicken gyros, so I have about a cup of Greek yogurt right here. You can use fat free Greek yogurt, or whatever you want.
  • Lemon juice, cup your hand underneath so you can catch all the seeds.
  • we’re gonna do a little bit of extra virgin olive oil. I’m using Private Reserve olive oil from Greece. You can find it on TheMediterraneanDish.com
  • We’re gonna do some red wine vinegar. So we’ve got our red wine vinegar and our lemon juice in here to give that acid, but the yogurt protects the chicken and really does a good job of marinading and making it nice and tender. 
  • From here we’re gonna add about three garlic cloves, three or four, little bit salt and pepper. And then a good amount of oregano, ’cause we’re adding some Greek flavors here.
  • And then I have a few spices just to add depth. These are all natural spices that are also available on TheMediterraneanDish.com. And then cumin, Coriander.
  • If you like cumin and coriander are like twins. They go together. If you are into it, which I am, a pinch of cayenne pepper. Just to add just a little kick.
  • let’s mix this flavor  together to make our marinade. Yogurt marinade. Make sure all the flavors mixed.
  • All right, from here we just simply add our chicken. If you have the time, let it marinate for 30 minutes or so. Or put it in the fridge for a couple hours. It makes a lot of difference in taste. Work the chicken into the marinade.
  • This is where all the flavor is, so you wanna make sure that every little piece of chicken is real coated with the yogurt marinade. Let’s just wrap this up and put it in the fridge for a a little bit to let
  • Okay, now heating up a non-stick skillet you guys, I wanna use a non-stick skillet because I don’t want things to stick too much. So it’s really important if you have one, that would be your best option for this particular recipe.
  • I’m going to add some extra virgin olive oil. Okay, so you’re gonna wanna shake any excessyogurt off the chicken. leave the chicken alone for five minutes or so and then turn it over.
  • All right, and then a few minutes on this side and we are ready for some gyros. Now let’s warm up some pita bread right on the stove top. Just like medium-ish heat.
  • Grab your pita, Just warm it up until it’s nice and soft.  All right, we’ve got some amazing warm and bubbly pitas
  • right here, and we’ve got our chicken ready, and we’ve got our tasty fixings.
  • Tzatziki sauce, by the way, we have this recipe for homemade Tzatziki sauce, This is a Greek yogurt and cucumber sauce if you’re not familiar. I like to spread quite a bit of it and thengrab a couple of the chicken. Just put whatever you like.
  • I like a little bit of cucumber. I stay center, so that I can actually wrap my pita around. That’s how I do it. Some onions, tomatoes, these are just sliced into half moons or wedges, or whatever you call them. Some green peppers, all the fixings. And then kalamata olives. Totally optional. I love them. And if you’re into it, a little bit of Greek feta cheese. And that’s really it, and I just wrap it up
  • It’s super simple. This is a pregnant chicken gyro.
